Homemade Apple Cinnamon Muffins


I have been really getting into making things with the kids lately. Seems like they really like it and there is always something good to eat at the end of it. Anyway, I wanted to share a new recipe I found for apple cinnamon muffins. They are DELICIOUS!! Please try this recipe, you won't want to miss this!

Apple Cinnamon Muffins

Ingredients for muffin:
1/2 c. flour
3/4 c. white sugar
1/2 tsp. salt
2 tsp. baking powder
1 tsp. cinnamon
1/3 c. vegetable oil
1 egg
1/3 c. milk
2 medium apples- peeled, cored, and chopped small

Ingredients for topping:
1/2 c. white sugar
1/2 c. flour
1/2 c. butter
1 1/2 tsp. cinnamon

Directions:
Mix dry ingredients for muffins first (by hand). Then add the wet ingredients and stir until blended well (will be thick). Fill muffin tins to the top with mixture. Be sure to use muffin liners in your tin. Before you put in the oven, mix your topping and put a spoon full on top of each uncooked muffin. BAKE in the oven for 20-25 minutes at 400 degrees.
